They say that a sign of a great cook is the ability to make a great, simple roasted chicken. Roasted chicken is a Friday night staple, a classic Sunday supper and one of the most delicious ways to prepare chicken. Did we mention it’s also really simple?

Choose an amount to donate

Ingredients

1 whole chicken,  rinsed and patted dry
fresh herbs such as sage, rosemary, thyme, parsley
1 whole lemon, cut into slices
2-3 garlic cloves
2 Tbsp olive oil
1/4 cup white wine or orange juice or mixture
salt and pepper

Directions

Mix together chopped fresh herbs, whole garlic cloves, lemon slices, orange juice/wine and salt and pepper in a bowl.

Place whole chicken in a sealable plastic bag and pour marinade over the top. Seal bag and smush around until completely covered. Place in fridge for 2-3 hours or overnight

Preheat oven to 450 degrees.

Place chicken on an upright roaster, or on top of a beer can that has been emptied halfway.

Cook for 30 minutes. Reduce heat to 400 degrees and rotate chicken. Cook another 25-30 minutes.

Allow chicken to cool slightly before handling and cutting into pieces.
