Broccoli Kugel

This delicious and easy side dish is great for everyday meals or special occasions. You can substitute any frozen vegetable for a colorful twist.

Ingredients

2 lb broccoli

4 eggs

1/2 cup mayonnaise

3 Tablespoons onion soup mix

3 Tablespoons oil

3 Tablespoons flour or breadcrumbs

1/2 cup breadcrumbs

Directions

Cook, drain, and mash broccoli. Mix all ingredients except for breadcrumbs in a bowl.

Sprinkle a 9×13 pan with breadcrumbs. Pour broccoli mixture into pan.

Bake at 350F for 45 minutes to an hour until golden.
