Parsnip & Carrot Curried Chips

A tasty sidedish that is 100% kosher for Passover.

Ingredients



2 large parsnips, peeled and cut into sticks (french fry size)
2 large carrots, peeled and cut into sticks
1 large onion, cut into quarters and peeled apart
2 Tablespoons olive oil
1 teaspoon chili pepper
1 teaspoon garam masala
1/2 teaspoon salt

Directions



Yield
4 servings


Preheat oven to 375F.

Put parsnips, carrots and onion in a large bowl or a ziploc bag. Combine oil and spices. Pour over vegetables and mix up with hands or shake in the bag.

Lay out vegetables on baking sheet, be careful not to overlap. Bake for 30 to 45 minutes or until roasted.
