Easy Everything Bagel Salmon with Smashed Potatoes Recipe

Dinner in under 45 minutes.

This is one of the easiest ways I know to cook salmon — just slather it with mustard and cover it with everything bagel seasoning. Coupled with smashed potatoes, it’s a perfect meal.

I like to use Trader Joe’s Everything But the Bagel Sesame Seasoning, but you can find a similar blend just about anywhere, from Costco to Aldi. You can also make your own by mixing a teaspoon each of kosher salt, poppy seeds, black sesame seeds, white sesame seeds, onion flakes and garlic flakes. But if the previous two sentences stress you out, you can just use 2 tablespoons sesame seeds and call this “Sesame Salmon.” Both the salmon and potatoes are delicious served with sour cream or tartar sauce.

Everything Bagel Salmon with Smashed Potatoes Recipe

4.3 from 3 reviews

One of the easiest, and most rewarding, ways to cook salmon.

  • Total Time: 40 minutes
  • Yield: Serves 4

Ingredients

  • 1 lb small creamer potatoes
  • ¼ cup olive oil
  • ½ tsp kosher salt
  • 1 tsp garlic powder
  • 1 ½ lb salmon, preferably in one large piece (skin-on or skinless)
  • ¼ cup Dijon mustard
  • 2 Tbsp everything bagel seasoning
To serve:
  • 1 lemon, cut into wedges
  • sour cream or tartar sauce (optional)

Instructions

  1. Preheat your oven to 400ºF. Line a sheet pan with parchment paper.
  2. Place the potatoes in a saucepan and cover with an inch of cold water. Bring the water to a boil over high heat, then turn the heat down and simmer until the potatoes are tender (test with a paring knife), about 15 minutes. Drain the potatoes and transfer them to the sheet pan.
  3. Use the bottom of a mug to press on the potatoes so they crack open and are about ½-inch thick. If some break apart, it’s ok! Drizzle the potatoes with the olive oil and sprinkle evenly with the salt and garlic powder.
  4. Spread the potatoes out around the perimeter of the pan so that they make a sort of frame around the open center. Place the salmon in the center of the pan and coat it evenly with the mustard and then the everything bagel seasoning.
  5. Roast until the potatoes are crisp and the fish flakes easily and is opaque in the center (test by poking it with a paring knife), about 20-25 minutes.
  6. Serve with the lemon wedges for squeezing over, and sour cream or tartar sauce.

I tried it tonight and I especially liked the smashed potatoes. I’m going to roast potatoes like that again. The fish was excellent, too. Next time I’ll use a bit less mustard. I couldn’t really taste the everything bagel topping, actually.

If you’re able to get your hands on Trader Joe’s Everything But the Bagel Seasoning, do it. The alternatives made by other manufacturers pale in comparison.

Bugs me when recipes call for a specialized ingredient that could be replicated with a little effort.

I like the idea with the salmon and smashed potatoes. Planning on trying it. Using dry mustard in place in place of Mustard. The mustard might be a little overkill for some.
