These side salads are anything but boring.

Israeli-style chopped salad, typically made with cucumber, tomato, sometimes red onion or peppers and always with fresh herbs and lemon, is about as simple and perfect for summertime (or anytime) as it gets. There’s no cooking involved, and it’s healthy, refreshing and easy to throw together. But even perfection needs a little shaking up once in awhile. The simple salad lends itself well to many interpretations: Add cheese for creaminess and a bit of tangy bite, add chickpeas for added protein or turn it into ceviche for a summer-perfect appetizer or light lunch.
