Smoked Trout Spread

A quick, light weeknight meal or appetizer.

  • Total Time: 5 minutes
  • Yield: 1 1/2 cups

Ingredients

  • 8 oz smoked trout, cut into chunks (or use smoked bluefish or whitefish)
  • 3 oz cream cheese
  • 3 scallions, chopped
  • ¼ cup milk (or yogurt), approximately
  • 1 Tbsp lemon juice
  • 1-½ tsp prepared white horseradish
  • fresh dill, for garnish (optional)
  • crackers or slices of baguette

Instructions

  1. Place the trout chunks, cream cheese, scallions, milk, lemon juice and horseradish in a food processor or blender and pulse until well-mixed. Add more milk if the mixture seems too thick. Spoon the mixture into a bowl to use as a spread. Garnish with dill if desired.
  2. To make canapés: About 30 minutes before serving, spread equal amounts of the trout mixture onto crackers or bread slices.
  3. To make a dip: Mix in more milk to obtain a soft consistency (2-3 more Tbsp, approximately).
