Mini Apple Kugels with a High-Protein Twist

All the cozy, cinnamony goodness you love, now with 8g of protein per kugel (because even kugel deserves an upgrade).

  • Total Time: 25 minutes

Ingredients

  • 2 apples, chopped 
  • 2 scoops Qualify unflavored protein powder
  • ¾ cup sugar 
  • ½ cup flour
  • 1 tsp cinnamon 
  • ½ tsp baking powder
  • 3 eggs
  • ½ cup olive/avocado/coconut oil  
  • 1 Tbsp lemon juice 
  • 1 tsp vanilla extract 

For the glaze (optional):

  • powdered sugar and water

Instructions

  1. In a bowl, mix all the dry ingredients together: protein powder, sugar, flour, cinnamon and baking powder.
  2. Mix in 3 eggs, oil and lemon juice.
  3. Chop your apples. Once your batter is mixed together, mix in the chopped apples.
  4. Scoop the batter into muffin tins.
  5. Bake at 425°F for 12-15 minutes.
  6. Let it cool and (optional) drizzle an icing glaze made with powdered sugar and water.
  7. Enjoy!
