This tabbouleh salad makes the perfect summer salad.

  • Total Time: 10 minutes
  • Yield: Serves 4-6

Ingredients

  • ¾-1 cup fine bulgur, soaked in hot water for 10-15 minutes, drained
  • 5-6 Tbsp good quality olive oil (do not skimp on quality)
  • 3-4 lemons, juiced
  • 2 tsp ground cumin
  • 1 Tbsp kosher salt
  • 5 scallions, chopped
  • 1 pint grape tomatoes, chopped
  • 1 bunch fresh flat-leaf parsley, chopped
  • 1 handful fresh mint, chopped

Instructions

  1. Combine the bulgur, olive oil, lemon, cumin and salt in a bowl and let stand for 20-30 minutes while chopping vegetables.
  2. Add remaining ingredients and mix.
  3. Serve sprinkled with more fresh mint.
