I’m not sure whether I influenced my YouTube Shorts algorithm or the algorithm influenced me, but either way, I’ve been watching a lot of videos about gut health. I’m sure you’ve seen them too: 10 things to improve your gut health. 3 things I would never do as a gastroenterologist. This chia pudding LITERALLY heals your gut, etc.
And while I would love to effortlessly give up drinking coffee on an empty stomach, stop drinking ice water, and spend my days practicing deep-breathing techniques, the one tip I can truly get behind is eating more fermented foods. I love them — and if I could, I’d eat them with every meal.
The algorithm has picked up on this and sent me down a rabbit hole of “how to ferment your own food at home” videos. My favorite creator by far is a YouTuber whose handle is @ahnestkitchen. She creates beautiful shorts of her mother making kimchi at home. (She also posts Korean beauty videos, but that’s a topic for another day.) The food videos were even featured on America’s Test Kitchen for how to make great kimchi at home in just 24 hours.
While I haven’t yet bought a mat or a giant bowl to crouch on the floor and make kimchi the traditional way, I have been inspired to try easier, more familiar ferments, like the ones we write about here at The Nosher. From sauerkraut to pickled watermelon to amba, we’ve rounded up our favorite pickling and fermentation recipes.
Try your hand at pickling for your next kitchen project!
