The YIVO Institute for Jewish Research presents a lecture on Ashkenazi Jewish foodways and their roots in the regional cuisines of Eastern and Central Europe. The talk explores traditional dishes shaped by Jewish ritual life and how immigrants adapted their culinary practices after arriving in America in the late nineteenth century. It concludes with a look at how those traditions helped shape the American Jewish foodscape today.
