Parsnip and Carrot Curried Chips

A tasty sidedish that is 100% kosher for Passover.

Ingredients

  1. 1/2 teaspoon salt
  2. 1 teaspoon garam masala
  3. 1 teaspoon chili pepper
  4. 1 large onion, cut into quarters and peeled apart
  5. 2 Tablespoons olive oil
  6. 2 large carrots, peeled and cut into sticks
  7. 2 large parsnips, peeled and cut into sticks (french fry size)

Directions

Preheat oven to 375F.

Put parsnips, carrots and onion in a large bowl or a ziploc bag. Combine oil and spices. Pour over vegetables and mix up with hands or shake in the bag.

Lay out vegetables on baking sheet, be careful not to overlap. Bake for 30 to 45 minutes or until roasted.
