French Onion Latkes

If you love gruyere and French onion soup, you will love these.

Ingredients



3 large yellow onions, sliced thin
1 Tablespoon oil
2 1/2 lb potatoes, cleaned
3/4 cup matzo meal
3 eggs
1/2 cup shredded gruyere

Fry the onions in the oil on low heat until caremlized at least 30 minutes, stirring occasionally.

Grate the potatoes in the food processor and place in a large towel. Squeeze out all the water from the potatoes into a small bowl, allow to settle for 10 minutes.

In a large bowl, combine the grated potatoes with the carmelized onions, eggs, cheese, matzo meal, and salt and pepper. Mix until all combined.

Heat frying pan with a layer of oil. Once hot drop large tablespoonfuls of potato mixture and flatten with spatula. After a few minutes flip to cook both sides until golden. If they are not sticking together well, add more eggs to the rest of the batter.

You can cook them ahead and bake in a 350F degree oven until heated through around 10 minutes.
